Programs for Digital Signal Processing

Although "Programs for Digital Signal Processing" is a bit dated (read: written in Fortran), it contains the original reference code for several fundamental DSP algorithms, including the famous Parks-McClellan FIR filter design algorithm. It's a true DSP classic.
